  • Start adding the mushroom broth one ladle at a time, each time waiting for the rice to fully absorb the liquid.
  • After adding the last ladle of broth, check that the rice is cooked. The rice should be al dente.
  • Add the grated parmesan, stir and remove from the heat.
  • Serve the risotto with the chopped green onions and extra Parmesan.
