Ingredients:
- 2 large courgettes
- 1 onion
- 2 garlic cloves
- 200 ml cream (10-20%)
- 150 g soft cheese (e.g. melted or cream cheese)
- Olive oil for frying
- Salt and pepper to taste
Preparation:
Slice the courgettes, onion and garlic. In a saucepan, fry the onion until golden, add the garlic and continue frying for a further 1-2 minutes. Add the sliced courgettes and fill with water so that it completely covers the vegetables. Cook until the courgettes are soft, then puree the soup with a blender. Pour in the cream and add the cheese, stir until smooth. Bring to the boil and remove from the heat. Season with salt and pepper to taste. Serve with herbs and crispy croutons.
2. Summer courgette purée soup with basil
Ingredients:
- 3 courgettes
- 1 potato
- 1 carrot
- 1 onion
- A bunch of fresh basil
- 1 litre of vegetable stock

Preparation:
Dice all the vegetables. Heat the oil in a saucepan and fry the onion and carrot until soft. Add the potatoes and courgettes and pour in the vegetable stock. Cook until the vegetables are fully cooked. After that, chop the soup into a puree using a blender. Add fresh basil, season with salt and pepper. Serve with olive oil and slices of baguette.
3. Courgette soup with chicken and herbs
Ingredients:
- 2 courgettes
- 1 chicken fillet
- 1 potato
- 1 carrot
- 1 onion
- A bunch of parsley and dill
- Salt, pepper to taste
Preparation:
Boil the chicken fillet until ready, then cut it into pieces. In the same broth, add chopped potatoes, carrots and onions, cook until the vegetables are ready. Add the courgettes and simmer for a further 10 minutes. Mix with the chicken and let the soup infuse for a little longer. Just before serving, add chopped herbs and freshly ground pepper.
4. Courgette soup with mint and lemon
Ingredients:
- 3 courgettes
- 1 leek
- 1 potato
- A bunch of fresh mint
- 1 litre of vegetable stock
- Juice of half a lemon
- Salt, pepper to taste
Preparation:
Slice the leek into thin rings and fry lightly in a saucepan. Add the sliced potatoes and courgettes, pour in the vegetable stock and simmer until tender. Puree the soup with a blender. Add fresh mint, lemon juice, salt and pepper. Serve with croutons or croutons garnished with mint leaves.
